How we came to beet.
Wild Beet Salad Company, formerly known and loved as Lettuce Eat, was born out of Kelcie Nollner’s desire to give Memphis healthier dining choices. Kelcie attended college in Manhattan and “got used to eating salads every day because there are salad stores on nearly every block.” After graduating and returning to Memphis, Kelcie started to build a unique fast casual restaurant where diners can choose from a variety of healthful options for a great price.
Wild Beet Salad Co. offers salads and wraps, with an emphasis on fresh ingredients. The lettuce for all salads and wraps is hand-chopped to order. Selections include vegetables, fruits, protein, cheese, nuts, and “crunchies”. Wild Beet Salad Co. is open for lunch and dinner with dine in, carry out, and catering available.
Kelcie delivers tasty food in a fun, casual environment, while providing healthy whole foods.
